Cadbury Ebony Compound Dark Chocolate Buttons 15kg

Cadbury compounds are specially formulated using lauric type cocoa butter substitute fats and other quality ingredients. Avoid use with non compatible fats such as cocoa butter based chocolates. Cadbury compound products do not require tempering.

Tempering: Tempering is not necessary for this product. Follow melting instructions as listed below.

MICROWAVE: Melt in short bursts. Stop when 45˚C is reached. Do not heat over 50˚C.
INDIRECT: Place buttons in a dry pan over warm water and stir constantly until 45˚C is reached. Avoid heating over 50˚C. Avoid contact with steam, water or wet utensils.
We recommend use of a handheld digital probe to check temperature.

Cooling: The ideal cooling conditions are 15–20˚C and 50%RH. Circulate with cool dry air. Avoid overchilling.
